Since we know that G-d didn't give more Torahs after Mattan Torah, (and we know Moshe learned EVERYTHING even if he didn't teach it necessarily) then what is Neviim and Ketuvim? The aggadot about Chazal's lives? The Bat kol? What does it mean that G-d didn't give more Torah information later?

They're further nevuos (and sefarim written by neviim with ruach hakodesh). They aren't Torah in the same sense, they dont have the status and dont have more laws.
