The Midrash Tanchuma in Parashat Toldot says that the Satan stalled Esav while he was trapping animals to give Yakov Avinu time to secure the berachah. My kasha is this:Isn't the Satan Esav's guardian angel? Why would the Satan inhibit Esav if his job is to watch over him?

Well that's why the words of the Medrash are "Hashem sent the Satan" to stall him. Meaning, it was a special unique task from Hashem that the Satan was doing.
As to why the Satan, the answer is because Esav would listen to the Satan much more than he would a regular Malach. He thought if the Satan is stalling him he should acquiesce to what the Satan wants. Thus Esav was fooled into allowing Yaakov to get the Brachos.
