So, we know that Ashkenazim look different from Sephardim....and Ashkenazim are decendants of the Jews from antiquity....but how did Ashkenazim end up with blonde hair and blue eyes? Is it true there is a kabbalistic source that says that different lands cause people's appearance to change?

It would probably take some knowledge of geneetics to answer this. I dont know aout the zohar you mention, but skin color can depend on where someone (or their parents) lives, so maybe its the same with hair. watever caues the variation between countries would apply here also.
