When and how does a convert recieve his nefesh Elokis?

When he converts he is considered like a totally new person. Not only does he get his Jewish Neshama, but even the Neshamos that he had previously are replaced. Even his "Guf" obtains a different physical nayure (though to a scientist it would look the same).

How does the body of a Jew have a different physical nature than the body of a non-Jew?

I don't know the biology, but the Chasam Sofer in Nidah (9a) writes that since Akum eat all sorts of non-Kosher species their bodies are subject to different effects. Also, the Chazon Ish (YD 215) writes that when a woman converts her body goes through biological changes. There are other such sources as well.
