Does one just daven shacharis and mincha according to the time of his destination or his departure?
For example on a flight to Israel? Say my flight leaves in the afternoon, when would I daven mincha on the plane? And since I land in the morining, when would i daven shacharis?

The zman tefilah depends on where you are at the time you are davening. In other words, on the plane in that spot over the Atlantic. You want to make sure you daven a Shachris, Minchah and Maariv for each day, so you could daven Minchah on the plane, Maariv too, and Shachris either on the plane, if you are on the plane when Zman Shachris arrives, or you can wait until you land (provided that by that time, in Eretz Yisroel, the Zman Shachris has not expired).
