Are Gerald Schroeder's books ok to read? Is he accepted as a reliable source?

Dr. Schroeder means well, but the answer is no. You should only read Hashkafa books and interpretations of Brias HaOlam from people who are Talmidei Chachamim in areas of Hashkafa and Brias HaOlam. Not scientists. If someone made an Eruv you would not use it unless that person knows Eruvin . Same thing here.

There are plenty, but that is not the point.

If I told you not to buy a box of cookies because it doesn't have a Hashgacha, you would not ask "But what's wrong with the processing?" You'd understand that unless the cookies have a Rav HaMachshir, you don't even think of eating them.

Same thing for Hashkafos and Torah thoughts.
